No-Bake Chocolate Coconut Cookies by Chef Bayan

1 cup Dark or semi-sweet chocolate chips 
1 tbsp coconut oil 
1 scoop dutch chocolate Protein powder  
¾  cup rolled oats 
1 cup shredded sweetened coconut flakes  
Pinch of salt

Directions

  1. In a double boiler or microwave safe bowl, melted your chocolate chips with your coconut oil 
  2. Once melted, add in your protein powder and mix well. 
  3. In a food processor blend together your oats and coconut flakes for 5-10 seconds. If you want a chunkier cookie, only blend for a couple of seconds. 
  4. Add in your oat mix into your melted chocolate. 
  5. Mix all together until you have a smooth, thich batter. 
  6. Roll into balls and shape into a cookie, place in freezer or fridge to firm.
