Protein Pancakes + Strawberry Banana Smoothie

Protein Pancakes
- In a medium bowl or glass measuring cup, add milk. Stir in vinegar and let sit for 5-10 minutes.
- In a large bowl, whisk together flour, protein powder, baking powder, baking soda, and salt. To the milk mixture, add egg, vanilla and oil or butter, whisk until fully combined. Pour into flour mixture and stir until combined. Do not overmix, small lumps throughout the batter are fine.
- Heat a large skillet or griddle over medium heat. When hot, add 1 tsp of butter, swirl pan to coat. Pan should be hot when adding the batter.
- Using a 1⁄4 cup measuring cup, scoop batter onto the hot skillet.
- Cook pancakes until bubbles form on the top, if the underside is browning too fast, lower heat, about 1 to 2 minutes. Flip and cook about 1 to 2 minutes longer. Serve immediately, or place in a 200F oven until ready to serve with honey or maple syrup.
- Repeat with remaining batter, using tsp of butter each time to grease the pan.
Strawberry Banana Smoothie
- Add all ingredients to a blender and puree until smooth. Pour into glass and drink immediately.
